Tuscan Onion Soup

Sundays I like to potter about, mainly in the kitchen. If we haven’t had a large breakfast I usually make a hearty soup for lunch….and then we walk the dog and watch movies….pretty simple really

Today I made Tuscan Onion Soup….this is a really easy soup to make…..and costs a very cheap 40p per serving…whoop whoop

Luckily, I had all the ingredients knocking about in my cupboards BONUS!

And so here goes the recipe which I took and altered a bit from my ‘Practical Cookery, Quick and Easy’ book


50g Cubed Pancetta Ham

Olive oil

4 White onions, sliced thinly into rings

3 garlic cloves – chopped

1 1/2 pints of chicken stock (made from 2 Aldi Stock cubes – 7p)

Bread (In this case I had some part-baked rolls to use up) 39p but ideally you are to use Ciabatta

Cheese (again use whatever you’ve got to hand)

Salt and Pepper

1. Fry up pancetta cubes in a large pan for about 3-4 mins then take out and set aside.

(Note – I used up some leftover Pancetta from Christmas but Aldi sell this at I think 99p for a double pack)

2, In the same pan you used for the Pancetta, add some more oil and cook the onions and garlic over a high heat for 4 minutes….keep stirring as and when. Reduce the heat, cover and cook for 15 mins or until the onions are lightly caramelized.

3. Add the stock and bring to the boil. Reduce heat and leave to simmer, covered for about 10 mins.

4. In this time I cooked the part baked rolls, sliced them in half….toasted under grill and added some cheese and grilled. Then I cut them into bite sized pieces.

5. Once soup is ready, add the reserved Pancetta cubes and season to taste ( I didn’t bother with salt because it was salty already from the stock and pancetta)

6. Put into 4 soup bowls and top with the toasted bread

Cost £1.60 in total and served 4 people
