Another Mid-Week Meal that was both DELICIOUS and FRUGAL…..double whammy!

Husband has worked the cost out to be approx 47p a head INCLUDING the side salad and sauce (see my other recipe for homemade MARINARA SAUCE)

Pizza Potatoes

1 Baked Potato per person

– I bought a massive bag of spuds from Aldi this week for just £2.49 and there were some big ones in I used for this and the rest will do for the recipes I have for the rest of this month- 

Cheese (I used Cheddar, but use whatever you like and have in at the time)

Pepperoni (I used 2 per potato but depends if you want to be that frugal)

– Pepperoni was 79p from Aldi and I only used part of the pack, I have some leftover for the Pitta Pizzas on Friday and the Pizza Wheels I am going to be making this week for lunches

Dried mixed herbs for sprinkling on top


1. Pierce potatoes with a sharp knife and pop them in the microwave for about 6/8 minutes. Warm up your oven 

2. Pop the potatoes in the preheated oven at about 180/200 for about half an hour or until the skins are crispy

3. Take them out one at a time with an oven glove! (You’ve heard the expression ‘HOT POTATO’…this is where it comes from!!) Cut them in half and scoop out the potato 

4. Mash all the potato filling from all the potatoes with some butter and some grated cheese and dollop it back in the shells

5. Cover with pepperoni (I sliced mine into smaller pieces) sprinkle with cheese and mixed herbs and bung back in the oven for 10 minutes (or under the grill if you prefer them to look this way!)

I served mine with some side salad and some homemade MARINARA SAUCE on the side (included in costings)

Total Cost £1.87 which is 47p a head
