Baked Bean Curry

I stumbled across this recipe a couple of years ago on the Netmums website. At first glance I thought it was a bit of an odd combination and was surely to disappoint my picky family but it was a winner and I’ve been making it ever since.

Now for me I always have a well stocked herb and spice store…I think once you’ve built this up it opens doors to the meals you can have a go at…I buy mine in bulk from the Indian Supermarket, Ebay or when I’m on holiday and I’m scouring the local markets…..If you have these in already this will make this meal cheaper!

Costwise it works out about £1 which is 25p per person including the rice…BARGAIN! But if you’re super hungry you could always add another tin of beans…let’s face it, it aint gunna break the bank!!

Baked Bean Curry
Baked Bean Curry 25p per serving

Ingredients (Serves 4)

1 onion

4 cloves garlic

Chopped chilli (or chilli powder)

2 tsp coriander

2 tsp cumin seeds

2 tsp mustard seeds

1 tsp ground ginger 

Oil for frying

225g sliced cherry tomatoes

1 tin of beans

Method

Fry chopped onion and crushed garlic in oil. Add chopped chilli to taste ( you know your family – if they like it hot throw in the chilli with passion….if not…add with care)

Add coriander, cumin seeds, mustard seeds and ginger in pan and cook it all until it’s soft

In goes the cherry tomatoes

In goes the beans

Season to taste….at this point I keep tasting and adding more herbs and spices to suit my palate…

Serve with rice (Like I’ve said before – I buy a massive bag from the Chinese Supermarket for £7 and it lasts for months, it’s also far easier to cook than any supermarket rice I’ve bought before!)
