Saturday night I always aim to cook something special once the kids have been trundled off to bed and we can have some ‘adult’ time.
My husband doesn’t like pasta. Well he likes the taste but he objects to the amount of carbohydrates it involves (more of this means he has to have less beer!!!)
But we’re on a budget. Pasta and money-saving go hand-in-hand in my book. So he eventually gave in and allowed me to cook us up this dish! It was clean plates all round so can’t have been all that bad!
I got the initial recipe from the Good Food website here
Super Smokin’ Bacon and Tomato Spaghetti 65p each
200g spaghetti (8p Aldi)
1 tbsp olive oil
60g bacon pieces (40p worth Aldi)
1 onion, finely chopped (Approx 7p Aldi)
1 clove garlic, finely chopped (Approx 3p Aldi)
2 tsp sweet smoked paprika
1 tin chopped tomatoes (31p – Aldi)
Grated Cheese (to serve) (Approx 40p – Aldi)
- Bring a large pan of water to the boil and cook the spaghetti following pack instructions. Meanwhile, heat the oil in a large non-stick frying pan and cook the bacon for 3-4 mins until just starting to crisp. Stir in the onion and cook for another 3-4 mins, then add the garlic and smoked paprika, and cook for 1 min more.
- Pour in the chopped tomatoes, bring to the boil and bubble for about 5 mins until thickened, stirring every so often to stop it catching on the bottom. Drain the pasta and toss with the sauce. Serve with Parmesan, if you like.
Costing – £1.29
But if you really want to push the boat out you could do what we did AND have garlic bread….ours was approx 55p for 2 (we had one)
So total costing with garlic bread is £1.57 which is rounded up to 79p each!!!!
