Chunky Bean & Bacon Soup

You can’t beat a warming bowl of soup on a cold dark January night. I can’t abide tinned soup anymore…its so simple to make yourself and you can throw in all sorts that you might have lying in the bottom of your fridge. I understand that some people feel they don’t have the time but trust me, once you get into the habit and realise how much more wholesome it is, not to mention cheap and flavoursome you will be concocting your own flavours in your sleep! If you are particularly short of time, it may be worth investing in a slow cooker! They are great for making soup!
This recipe in particular is substantial because of the beans, but if you’re really hungry why not add some bread on the side? We had 4 part baked rolls from Aldi that cost 39p, so just add another 10p per head onto your price.
1 onion, finely chopped (9p, Aldi)
100g bacon lardons (50p, Aldi) they come in 200g packs so we are saving the rest for pizza toppings on Saturday!
1 tin chopped tomatoes (31p, Aldi)
1 veg stock cube (3p, Aldi)
1 tsp mixed herbs (1p)
1 tin butter beans, drained (33p, Aldi)
1 handful of curly kale (7p, Aldi)
100g frozen peas (10p, Aldi)
Salt and Pepper
Use a large pan. Fry the onions on a medium heat for a couple of minutes. Add the bacon and cook for another 3 minutes. Keep stirring.
Add the tomatoes. Add the stock cube to a mug full of hot water, mix till dissolved then add to the pan. Stir.
Add the rest of ingredients until it bubbles at the sides. Turn heat down and pop a lid on the pan, leave it to simmer whilst you bake the bread, set the table, round the kids up..whatever you usually do!
If there is not enough liquid just add more hot water and stir.
